Chocolate Peanut Butter Mousse Tart

This luscious, surprisingly light chocolate peanut butter mousse tart not only tastes unreal, but it's also absurdly easy to make and impossible to mess up. 

The crust is made with just one (yes, just one!) ingredient: Pure Organic Peanut Butter Chocolate Chip Bars. Pure Organic bars are made with simple ingredients like dates, cashew butter, peanuts and chocolate chips, which are essentially all of the ingredients we'd typically use in a vegan/gluten free tart crust.

We especially love the Peanut Butter Chocolate Chip Bars - I'm a huge fan of pretty much anything that involves peanut butter and chocolate, so it's a no brainer for me. We've been grabbing one for a quick snack on busy afternoons (paired with a third cup of coffee), and my husband often takes them to work as part of his lunch. They're just sweet enough to satisfy any craving you may have, but they're made with real, wholesome ingredients!

Moving on to the filling...we quite honestly had a realllyyyy tough time refraining from eating the entire filling with a spoon before it went in the tart. It's that good. We decided to call it a mousse because of its light, airy texture, but it's slightly reminiscent of a cheesecake as well, thanks to the addition of vegan cream cheese. There's only 1/4 cup of sweetener (maple syrup) in the entire filling, but it's plenty satisfying! 

I can't wait to make this tart again - I don't want to make it for myself because I know for certain I'll eat the entire tart in a 24-hour span, so I'm waiting for the next time we have someone over for dinner. The dark chocolate drizzle and crushed peanuts are the cherry on top of the sundae; you can never go wrong with more chocolate!

 

Chocolate Peanut Butter Mousse Tart

 

Crust:

· 5  Pure Organic Peanut Butter Chocolate Chip Fruit and Nut Bars

 

Filling:

· 1 7oz. container of vegan cream cheese

· 1/2 cup smooth peanut butter

· 1/4 tsp fine sea salt

· 1 tsp cinnamon

· 1 tsp vanilla extract

· 1/4 cup maple syrup

 

Topping:

· Melted dark chocolate

· Crushed peanuts

 

Method:

· In a food processor, pulse Pure Organic Bars until they form a crumbly texture. Press mixture firmly into an 8-inch tart pan.

· Add all filling ingredients to food processor and blend until smooth and creamy.

· Pour on top of crust and spread evenly. Place in freezer for 2 hours or until firm.

· Drizzle with melted dark chocolate and crushed peanuts and enjoy! Store in refrigerator or freezer.
