Broccoli Quinoa Salad
This salad is a fresh mix of crispy and creamy--a hearty, year-around family favorite.
INGREDIENTS
- 2 cups chopped broccoli crowns
- 1 cup cooked quinoa
- 1/2 cup slivered almonds
- 1/2 cup dried cranberries
- 1/4 cup chopped onion
- 1/2 cup fat-free milk
- 1/2 cup mayonnaise
- 2 tablespoons agave nectar
- 2 tablespoons vinegar
- Dash lemon juice
DIRECTIONS
1. In large bowl combine broccoli, quinoa, almonds, cranberries and onion.
2. In small bowl combine milk, mayonnaise, agave nectar, vinegar and lemon juice. Add to broccoli mixture. Toss to combine. Cover and chill at least 1 hour.
