Strawberry Banana Overnight Chia Oats Recipe

I've recently realized that to stick to eating a nutritious breakfast each morning, I really need to have it mostly prepped ahead of time, and there's no better option than overnight oats!

Overnight oats can be made in a huge batch if you'll be serving multiple family members for multiple days of the week, and you can change up the add-ins to keep things interesting. For this recipe, we've mixed in some caramelized bananas, which, let me tell you, are the single best way to consume a banana. We've also added a layer of strawberry chia pudding, because what goes together better than strawberries + banana?

A great overnight oat/chia parfait needs a bit of texture, which can come in the form of granola, coconut flakes, fresh fruit, or in this case, Pure Organic Layered Fruit Bars, which have become a recent snack favorite! These bars totally take me back to childhood - they taste like fruit snacks, but much, much better for you!

Pro tip: whichever toppings you're using, put some at both the top and bottom of the jar - otherwise, when you get towards the bottom of the jar, you'll be nearly out of toppings and let's be honest, the toppings are the best part.



Strawberry Banana Overnight Chia Oats Recipe



Caramelized Banana Overnight Oats:

· 3/4 cup oats

· 1 cup dairy free milk of choice

·1 tsp vanilla extract

·1 tbsp maple syrup (or other sweetener)

· 1/2 tsp cinnamon

· 1 large banana, sliced into coins

· 1 tbsp dairy free butter

· 1 tbsp coconut sugar




    Stir together oats, milk, vanilla, maple syrup, and cinnamon in a bowl. Cover and refrigerate. To make caramelized bananas, heat butter in a skillet over medium heat. Add in coconut sugar and banana slices. Sauté for 8-10 minutes, gently stir 2 or 3 times to prevent burning. Remove from heat and stir into overnight oat mixture. Refrigerate at least 4 hours or preferably overnight.




Strawberry Chia Pudding:

·1 cup dairy free milk of choice

·1/4 cup chia seeds

·1 tbsp maple syrup

·1 tsp vanilla extract

·1/2 tsp cinnamon

·1/2 cup mashed fresh strawberries




    Whisk together nut milk, maple syrup, vanilla, and cinnamon. Add chia seeds and whisk well. Stir in strawberries and refrigerate for 2-4 hours, stirring once or twice to prevent clumping.



To assemble parfait:

·Pure Organic Strawberry Banana Layered Fruit Bars

·Fresh strawberries and bananas



Assembly Instructions: 

Add a layer of chopped Pure Organic Bars to bottom of a jar. Spoon in a layer of oats, followed by chia pudding and then top with more chopped Pure Organic bars and fresh strawberries + banana.
