Purely Kaylie’s Vegan Cashew Tartlets

These gorgeous, vegan cashew tartlets, created by our partner Purely Kaylie, are the perfect homemade Valentine’s Day treat. You’ll need just 8 ingredients and no baking is required! They have a delicious cashew-and-coconut milk filling and use our Fruit & Nut bars as the crust, which makes the recipe super simple.



  • 6 Dark Chocolate Berry or Chocolate Brownie Fruit & Nut bars

  • Filling:

  • 1 cup raw cashews, soaked
  • 1/2 cup full-fat coconut milk
  • 6-7 tbsp maple syrup
  • 3 tbsp lemon juice
  • 2 tbsp coconut oil
  • 1 tsp vanilla
  • 1/8 tsp salt

    • Directions:

      1. Bring water to a boil. Pour boiling water over raw cashews and allow to soak for 30 minutes. After, drain the water.

      2. Use clean hands to press Pure Organic Dark Chocolate Berry or Chocolate Brownie Fruit & Nut bars into the tartlet molds. Leave a concave center so the filling can be added.

      3. In a high-speed blender or food processor, combine the soaked cashews, coconut milk, maple syrup, lemon juice, coconut oil, vanilla, and salt. Blend/process until smooth.

      4. Pour filling into the center of each tartlet. Store in the freezer for at least 4 hours. After, add toppings of choice (fresh fruit, melted chocolate, nuts, etc.)
