If you're looking for a great after-school snack to make with your kiddos that will feel like a special treat, I've got you covered!
To make the creamy cashew icing, soak 1 1/2 cups raw unsalted cashews in water overnight. Drain the water, pat the cashews dry and place them into a food processor. Process until a thick cashew butter forms. Add a 5.4 oz. can of coconut cream (refrigerated ahead of time, with any remaining liquid discarded), 1 teaspoon vanilla extract, 2 tbsp solid coconut oil, 4 tbsp maple syrup and a pinch of salt. Process again for several minutes until a creamy icing develops. Add 1/4 cup shredded coconut and process again.
To make the crust, unwrap a Pure Organic Cashew Coconut Bar and use your hands to form into a small round mini pizza. Spread cashew icing on top of mini pizza and top with fresh berries. Enjoy! (Note: Icing makes enough for 14-16 mini fruit pizzas.)
