When I had kids, certain things, like how messy my house was, became less important to me, and certain things, like the health of our earth, became more important. Funny how parenthood makes you rethink everything!
I want to take steps to be sure my kids and their kids can enjoy the beauty of the earth like I do. I also want to teach them ways to be responsible when it comes to caring for the earth. An easy and creative way to positively impact the earth is to make Meatless Mondays (or any other day) a ritual in your home. According to Earthday.org, if every person in the US ate plant-based meals rather than meat just one day a week, it would save as much pollution as taking 7.6 million cars off the road. Now that’s a huge impact! And with so many creative vegetarian recipes available, why not enlist the help of your family to expand your dinner menu to include some mouth-watering new plant-based dishes?
